Monitoring food temperature
The most important way to prevent bacteria from growing in food is to maintain it at the right temperature. The temperature of food is most accurately taken using a probe thermometer.
Click on the processes below to find out how to use a probe thermometer to check food temperature.
WASH: Rinse and clean the probe under hot running water, then rinse. You should do this between every reading.
SANITISE: Wash in sanitising solution or use sanitising wipes to clean the probe. You should do this between every reading
INSERT: Put the probe into the centre or thickest part of the food.
RECORD: read the temperature and if needed record the temperature of the food.
In addition, you should always:
- store the probe where all staff have access to it
- make sure the thermometer is calibrated regularly
- take corrective action if food is not at the required temperature. For example, continue to heat or throw out.
