Food safety is so important that there are laws about how a food handler should handle food. 

Food handlers must not knowingly handle food in a way that will make it unsuitable or unsafe for sale.

As a food handler it is your responsibility to ensure you are providing safe and suitable food. 

Food can become unsafe or unsuitable due to:

  • contamination
  • poor handling practices
  • poor hygiene practices
  • incorrect storage
  • undeclared allergens.

Selling unsafe or unsuitable food could lead to:

  • illness
  • council investigation and business closure
  • court cases and bad publicity
  • closure of the business with loss of jobs.
